High Quality USDA Processed Lamb

Valley Brook Farm is licensed and inspected by the state of Vermont to provide great tasting USDA processed lamb. Our lamb is primarily grass fed, during the winter months we do supplement with hay a pellet to balance out hay quality. This also ensures that our ewes have the energy they need during lambing.  Our lambs are raised here on our family's farm, these lambs are well cared for and receive the highest quality care we can provide them. They receive routine hoof maintenance, and regular parasite control through natural methods. Lambs are grazed naturally through the summer months, they are rotated onto pastures and always have access to shelter. These are not feed lot lambs. Most of our lambs are cared for and handled by 4-H members in the sheep project. Our lamb has a very mild sweet flavor.

Some facts about Lamb:

  • Lamb has little marbling (Fat within the meat) Fat is located on the outside of meat. Making trimming very easy!
  • Tunis lamb has a very pleasing mild flavor. This lamb is in no way gamey or musky.

We hear all the time, " I would love to try lamb but I'm not sure how to cook it!" Lamb can be prepared with the same methods used for pork or beef. Rack, Loin and ribs are great for grilling, broiling, and roasting. Shoulder, Shank & Rib are great for Braising and stewing. Ground lamb is very versatile and can be used in the same manner as ground pork or beef.
